Come to think of it, I will trade any one or all of these jars for some unique varietal honey.
Black Locust - Very mild honey, with a unique viscosity . . . VERY "Thick".
Linden- This is probably the most unique honey I have. In 2012 we were in a drought, so the summer wildflowers were not producing. However, the linden trees (with deep roots) produced prolifically. This honey as about as pure "linden" as you will get. It has, what I would consider, and extreme minty taste. Some almost described it as a "menthol" flavor. Very unique.
Goldenrod - By far my favorite honey. There is not a bit of "stink" left in this honey. It has an amazingly complex flavor. This is my go-to honey.
