storing comb honey
« on: August 27, 2006, 09:34:22 am »
Hello Folks.  I have been selling comb honey at the farmers’ markets.  I have been asked by customers how they should store the comb.  I have told them that they can keep it on the counter if they will eat it within a couple of weeks, but keep it in the fridge or freezer if it is going to be around longer than that.  What do you think?  I suppose that the wax could crow mold if kept out for too long.  Any ideas?  Thanks.

I will keep fine at room temperature in the original container.  It may eventually crystalize, but that won't hurt it.  In the freezer it will keep virtually forever without crystalizing.
