How do you make Honey Crystals?

Just wondering what goes into making Honey Crystals.

As in crystallized Honey? 

Honey does it naturally over time...Different honey, take different lengths of time.  Temperature is also an issue, I think 57° is optimal for promoting crystallization.

This is basically all creamed honey is...You take honey and introduce some "seed starter" or creamed honey to set the wheels in motion, then that desired crystal size replicates throughout the batch.

Bye from supermarket a jar of crystallised honey. Mix it into bigger amount of your honey and keep it in cool.

Could you use the oven or a dehydrator to do it?

In the ingredients it comes before the organic honey so we can determine that its more than 51% not honey  :-X

evaporated-cane-juice = sugar  :-x So that product is mainly sugar with a bit of honey in it, I thing Id rather use normal honey that's much healthier for you  ;)
