I had a sack of beet's given to me so I made pickled beet's. after I cut out the bad spot's I got 8 pint's.

They look good. I just never could like them. Always fed them as a kid and even still today, they smell and taste like dirt to me. One of the few veggies I could never stomach.

Great, Irwin, they are one of the few veggies I can grow.
We live on the stuff here in aussieland, Allen. Vegemite and beetroot (as we call it). Yum.

All right, Irwin, I will tell you an aussie national secret, but you can't tell anyone. We ALWAYS have pickled beets in hamburgers, along with a slice of pineapple, fried egg, bacon, fried onion, lettuce, slice of raw tomato, tomato sauce (ketchup), melted cheese, hamburger meat, all on a toasted bun. We call this "hamburger with the lot".

Hey Irwin , You are right ; they are a treat ! However --- I have known several people who sheepishly admit that the following day after consuming beets , they became convinced that they were bleeding internally . That sure is a powerfully strong natural dye found in them . Burl

I love beets as well, but I know what you mean Burl :-D :-D Always a shock to see that!! I always think, oh no, not that monthly thing again, thought I was finished with all that :-D :-D

I can only eat fresh beets straight from the garden. Never could stomach canned. Those look good Irwin, glad you are enjoying them.

No we do not include vegemite in the Hamburger With The Lot. It is basically a staple food of take away and fish and chip shops. I'm thinking it may be more up your alley. Irwin, what is your recipe for pickling the beets?

About 25 small beet's
2 cup's sugar
1tablespoon pickling spice
1 1/2 teaspoon salt
3 1/2 cups apple cider vinegar
1 1/2 cups beet juice you can get this after you cook your beets.
I boil beets to desired tenderness the skins will peel off with your hands
slice into 1/4 inch slice's or what ever you want
combine sugar vinegar salt pickling spice and beet juice bring to a boil then let sit for about 10 minutes
then pour into jars leaving 1/2 inch head space after you fill them with your beet's
Then process for 30 minutes in a boil bath canner this will yield 6 to 8 pints
