can I take Honey Now?

hi all, I live in brisbane but have two hives on the gold coast, but am almost out of honey so my question is can I take honey now.
One of the hives has three deeps and the other is 2 deeps high, running unlimited brood nest.

So can I take three or four frames from these hives to supply my winter honey needs?

The three high hive is my first hive and in the first year it has swarmed twice and I have taken  split off it and still managed to get 20 or so kg off it. so it is a pretty good location, I think

Are the frames capped? Are you going to reduce the number of supers with winter approaching? Will there be enough winter stores for all your girls? Does the honey taste good? Will you use your tool to take a sample? Do you want to make another couple of splits with the brood? What are the queens like?

Think about these questions then you will probably have an answer to your query.
