overwintering with ivy honey?

hi, fellows!

once I was told that ivy honey is totally unsuitable for overwintering bees because it crystallizes quickly so the bees are not able  to consume it if they have no access to water during cold weather

on another occasion I was told that ivy honey flow is an excellent autumn bee forage

I have noted my bees are quite busy (and happy) with ivy flowers now,

but I have the dilemma: extract it or leave it?

does anybody have such an experience?

Plain old granulated sugar is often used to save hives in the winter.  As well as feeding them crystallized honey or frames of it.  Crystallized honey still has water in it.

I would leave it. Unless they have lots of extra.
