I sent my honey for analysis last week, and got the report this afternoon. Water 18.1%, sugar 62%, both made up about 80%. There is still 20% of content missing. What would be the likely ingredient that not being find out? To my understanding, honey only contains less then 1% of ash, and very low percentage of mineral and vitamin. They unlikely to be that 20%!

I extracted the honey myself, using honey ectractor, and very sure it does not comteminated, or added with other things. A polyesther screen was used to filter the honey.
