Title: uncapped nectar!?

ok I started with nucs , filled a deep,put on another , then put on the honey supers, some of the honey is capped but I think they won't get it all
capped.
 my question is what do I do with the uncapped nectar if I don't want to leave the honey super on all winter ?
 Pearls anyone?

Don't worry, I've never seen bees not finish their honey. Give them a little more time.

Could the liquid your seeing be water instead of nectar?

There is plenty of time for the bees to cap the honey,  Hold still.  There is still bound to be goldenrod and aster flow in you area in August.  

You are better with capped honey that you must uncap rather than uncapped honey with too high a moisture content that you can't eat.

I've got my bees in far N. Wis. (think UP Mich), actually, probably further north than you are, I wrapped the hives the 3rd week of Oct. last year.
You're girls have until at the very least mid-late October before they need to be wrapped up for the winter.  They'll have that honey capped and then some.
